Coconut Curry Veggie Pasta – A Healthier Vegan Recipe That Tastes Delicious

Coconut Curry Veggie Pasta Ingredients:
- Avocado oil: It can be a much healthier oil to cook and can enhance your total health and well-being. Ground curry: The curcumin in this spice is believed to help prevent or cure cancers. Ground ginger: The anti-inflammatory effects of the spice aid to help digestion.
- 1 teaspoon. Ground garlic: This spice includes powerful medicinal properties which may boost immunity.
- 1/2 cup chopped toasted almonds: This hot nut is a fantastic source of protein.
- 2 cups spinach: This dark leafy green is thought to be a superfood, also boosts hair, skin, and bone health.
- 2 cups blended berries: This antioxidant-rich veggie comprises lycopene, which offers health benefits.
- 2 cups bell peppers (sliced): These healthy veggies are full of vitamin C and carotenoids.

- 1 cup whole wheat orzo pasta: This fiber-rich (and tasty pasta) can be low in calories.
- 1/2 cup organic coconut curry sauce: Containing coconut milk, that includes good-for-you minerals and vitamins, a coconut curry sauce is a much healthier way to add flavor to a meal.
Coconut Curry Veggie Pasta Directions:
Step 1: Chop and mince the vegetables, and measure out the oil and spices.
Step 2: Sauté the garlic in a small avocado oil medium-high warmth, till it softens and turns gold.
Step 3: Add the lettuce, tomatoes, and bell peppers to the pan. Mix and cook until spinach wilts on medium. To assist the veggies soften, set the lid on the pan them.
Step 4: Add the spices into the veggies and stir fry together. While pasta is cooking continue to cook on low heat.
Step 5: In a kettle, bring water to a boil and then add orzo pasta. Stir occasionally. Then strain.
Step 6: Insert the curry sauce into the veggies and mix together.
Serve hot.
